Founded on April 14, 1954, the Casearia Bresciana cooperative grew rapidly along the Po Valley, gathering over a thousand breeders within its first year of activity. Thirty years later, it was processing half a million quintals of milk annually, destined for the production of Provolone Valpadana and other protected cheeses. This cooperative trajectory speaks volumes about the dairy plain of the North, where the scale of its members is the very condition of the denomination. Today, Ca.Bre's scope covers the seven hundred and twenty-six municipalities permitted by the regulations, converting fresh milk into the two souls of this spun-paste cheese: the sweet and the spicy versions, distinguished by the rennet used and the aging times. The cheeses retain the traditional profiles of their type—from 'salame' to 'melone' shapes—making them a recognizable presence on Italian cheese counters. Production does not include on-site hospitality, remaining a large-scale transformation operation serving the supply chain.
