A single denomination, but governed by strict rules: sheep's milk is transformed into hard cheese only between October and July, a seasonal window that links the cheese to the island's pasture cycle rather than to production convenience. Aging completes the design. A minimum of five months for table cheese, eight for grating cheese: it is during this prolonged maturation that the cheese develops the mineral clarity and almost crystalline structure that identify the denomination. Aresu operates entirely within these protocols, without shortcuts, making this its hallmark. The result is a Pecorino whose taste embodies the salinity and savoriness of a vast territory, yet regulated in every step, from the cheesemaking season to the day it leaves the warehouse.
