It is a cooked, hard-paste cheese, produced here cooperatively and crafted into substantial wheels, each weighing between 24 and 40 kilograms. Its character is born from time. Slow aging is what transforms the paste, developing the crystalline texture and umami notes that define this cheese in its more mature versions. At that point, the wheel lends itself to various uses without compromise: grated, or cut into flakes to be enjoyed on their own.
