In Erbezzo, a village perched on the Veronese hills, Caseificio Morandini carries on the production of Grana Padano DOP through generations of cheesemaking expertise. It is the company's sole denomination, transforming milk from the Po Valley into wheels weighing 24 to 40 kilograms, each undergoing slow and controlled maturation. Time, more than any other factor, builds this cheese. The long stay in the aging room develops the crystalline texture and aromatic complexity that distinguish Grana Padano from younger cheeses, and each wheel remains bound by the regulations governing the denomination across a territory of three thousand municipalities in northern Italy. Erbezzo's hilly location, above the plain from which the milk originates, places the cheesemaking facility at a crossroads between mountain and plain. Morandini does not open its doors to the public, but its work is measured by the consistency of its wheels, where adherence to the production specifications and the patience of aging converge in the same recognizable result.
