Caseificio Pennar Asiago S.C.A.
Asiago · Province of Vicenza · Veneto
On the Asiago Plateau, at an altitude of 1,070 meters, Caseificio Pennar collects milk exclusively from its member farms and mountain pastures (malghe) — about fifty entities united in a cooperative. The activity dates back to 1927, when the dairy was born from post-war reconstruction, and since then it has processed high-mountain milk according to the production specifications (disciplinare) of Grana Padano DOP. The denomination gives form to a cooked-paste, long-aged cheese, in which the high-altitude pasture leaves a distinct imprint on its character. It is precisely this connection between altitude, animal feed, and slow maturation that visitors can trace when visiting the dairy: an opportunity to understand how the milk from the Plateau becomes a DOP cheese, and how the mountain environment influences the structure and taste of a product that carries the dairy identity of these pastures.
