The wheels are made with a cooked, hard paste, following a process that concentrates the milk and governs its maturation. Each rests for at least twelve months, the minimum time required for the fine, crumbly texture that distinguishes the cheese from younger productions to develop. The cooperative operates within the protected area encompassing 133 municipalities, a perimeter where the production specifications (*disciplinare*) regulate cattle feeding, cheesemaking, and aging without shortcuts. For a mountain facility, high-altitude certification is not a geographical detail but a productive condition: pastures, forages, and climate enter the cheese paste even before the salt. Each wheel thus becomes a verifiable document, bringing together the cheesemaker's craft and the months spent in the warehouse, and placing Bardi among Emilia-Romagna's controlled denomination cheese strongholds.
