The Caseificio Sociale di Baselica Duce was founded as a dairy cooperative, an associative form that collects milk from its members and channels it into a single production process. It operates within the Grana Padano DOP zone, those 3,431 municipalities in northern Italy that make up one of Europe's largest dairy basins, transforming local cow's milk into wheels weighing twenty-four to forty kilograms. Grana Padano is a cooked-paste cheese with slow maturation: the wheel rests for a long time before reaching the table, developing its signature granular structure. The cooperative produces a product that embodies the denomination's typical dual purpose – as a table cheese in flakes and a grating cheese for cooking – where the same wheel changes function depending on the cut. The cooperative dimension adds a significant detail: the value of the processing returns to the milk suppliers, and the continuity of the dairy depends on the resilience of a community of breeders.
