Here, raw cow's milk is transformed using the cooked-curd technique, a method that allows no shortcuts and has remained unchanged for centuries. Each wheel then ages for at least twelve months, the minimum time for the paste to dry and structure itself. The result is a dense, finely granular cheese, recognizable by the crystalline flakes that break cleanly under the teeth—those granules that are the sensory signature of long aging.
