In the Modenese hills near the Sassi di Rocca Malatina, Caseificio Sociale San Luigi produces a few wheels of Parmigiano Reggiano DOP daily, all from milk exclusively sourced from their own farm. The supply chain is self-contained: forage collected on-site feeds the cows, the cooked curd proceeds naturally, and matures for at least twelve months. Each wheel carries the signature of a district that the denomination recognizes across 133 authorized municipalities. The choice is one of minimal intervention and fidelity to the place: no industrial shortcuts, just the slow time of aging to determine the cheese's character. In a vast territory where the same DOP manifests in infinite nuances, San Luigi narrows its focus to its own stable and pasture, making small scale a guarantee of consistency. The result is a Parmigiano that tells the story of the Guiglia hills more than a category, and measures its quality in constancy, gesture after gesture, wheel after wheel.
