In the Bergamo plain of Fornovo San Giovanni, Caseificio Taddei carries forward four generations dedicated to soft cheese. The facility, rebuilt in 1994 according to new hygiene and health standards, works exclusively with milk from selected local farms, a condition that ties each wheel to a restricted geographical radius. Two DOPs underpin its identity: Salva Cremasco and Taleggio. The two cheeses follow similar but distinct paths. Salva Cremasco matures for about seventy-five days using the washed-rind technique, which builds its aroma and savoriness; Taleggio, on the other hand, rests for at least thirty-five days on wooden boards, following a shorter and more delicate aging process. Since the change of management in 2022, the new leadership has maintained its commitment to rigorous self-control and listening to customers, blending artisanal methods with food safety discipline. The result is a dairy that interprets two Lombard classics, combining local milk sourcing, codified aging times, and the continuity of an updated family tradition.
