In 2020 alone, the cooperative processed 4.6 million liters, all destined for a single denomination. That denomination is Toma Piemontese DOP, a cylindrical cheese with a soft profile, offered here in both whole and skimmed milk versions. The certification mark covers a vast area — 886 municipalities — yet the product remains anchored to the valley that gives it its name, a testament to a cheesemaking tradition that has chosen not to separate the cheese from its territory.
