Castagna S.R.L. operates from Ornavasso in the Ossola valley, where alpine cheese-making traditions run deep. For over six decades, the producer has sustained the craft of Ossolano DOP—a pressed semi-cooked cow's milk cheese marked by its firm, springy paste and distinctive small irregular eyes. The house philosophy centers on preserving the territorial knowledge of the Piedmont mountains while maintaining quality standards across the 37-municipality Ossolano protection zone.
