Castello di Tassarolo produces Gavi DOCG across the eleven-municipality zone, crafting Cortese in bianco, frizzante, and spumante expressions. Since 2007, the estate has farmed organically and biodynamically, eschewing animal products in winemaking—a commitment extending to some bottlings made without added sulfites.
