Cava d'Onice began when Bruno Rossi leased five acres from his father and planted just one. Situated in Montalcino's medieval borgo, the winery now crafts Brunello di Montalcino DOCG—Sangiovese aged a minimum of 48 months—through entirely family-run operations. Each bottle traces the grape's journey from soil to glass, embodying the hillside terroir and the producer's singular approach to Tuscan winemaking.
