CAVALLINI 1919 S.R.L. (Az. Agr.)

Since 1919, Cavallini has shaped the terroirs of Corvino San Quirico into a study of sparkling excellence. Three generations—founder, son Carlo, and grandsons Bruno and Renzo—expanded from a modest cellar of six fermentation vessels and three hectares to command ten hectares of strategically positioned vineyards. Each plot was selected for sun exposure and soil composition suited to the varietal, allowing the Pinot nero, Chardonnay, and Pinot grigio to express their character. Today the estate crafts Oltrepò Pavese metodo classico DOCG spumante and rosé, each spending minimum fifteen months in bottle, developing the complexity that defines the denomination across Pavia's forty-one municipalities.
