Cofini Angelo operates in Avezzano, at the heart of the Fucino plateau in Abruzzo, where volcanic soil and careful drainage create ideal conditions for exceptional potato cultivation. The producer specializes in Patata del Fucino IGP, a protected designation covering nine municipalities. Each harvest yields tubers distinguished by their firm, compact flesh and smooth, non-separating skin—qualities demanded by the strict IGP protocol. This volcanic terroir, once a lake bed, imparts a mineral character that sets Fucino potatoes apart in Italian gastronomy.
