Founded in 1966, Coop. Allevatori Ovini aggregates 700 shepherd-members across Sardinia to transform their milk into Pecorino Romano DOP. The cooperative oversees every stage of milk handling, applying rigorous quality standards from collection to the distinctive hard cheese matured five months minimum—eight when destined for the grater. CAO's entire production rests on ovine milk alone, a singular commitment that sustains both tradition and the cooperative's competitive edge in the protected denomination spanning 783 municipalities.
