COPA aggregates leading olive growers from the Monti Iblei DOP zone in south-eastern Sicily, pooling expertise to craft oils of distinctive character. The cooperative's members oversee every production stage, from soil management to harvest timing, coaxing medium-to-intense fruity notes and green tomato aromatics from the hills' limestone soils. This collective approach yields extra virgin oils that express the terroir's true signature.
