Emilio D'Ascenzo identified the Rieti plateau's pastoral potential while traveling from Abruzzo toward Rome, discovering year-round fresh grazing across its expansive meadows. What began as a family caseificio has evolved into a multi-generational operation: today, his grandsons Daniele and Manuel Colantoni jointly steward production and herd management on the same green altopiano. The cooperative remains rooted in the Lazio highlands, where conditions have sustained their craft for six decades.
