Fattorie Garofalo is a cooperative dairy in Capua, Caserta, dedicated to Ricotta di Bufala Campana DOP—the creamy byproduct of buffalo mozzarella-making. Each batch emerges as porcelain-white curds, soft and delicately sweet, from whey salvaged during cheese production.
