Forti del Vento crafts Dolcetto di Ovada Superiore in Castelletto d'Orba, where biodynamic viticulture shapes every decision. The producer minimizes mechanical intervention, applying copper and sulfur only where vines require it, and encourages wild flora to support pollinators. In the cellar, winemaking adapts to each vintage's character—contact time with skins lengthens or shortens accordingly—to let the vineyard speak without additives or extraction.
