Frantoi Covato operates within the Monti Iblei hills of south-eastern Sicily, where hand-harvesting traditions meet modern milling precision. Since 1985, the producer has drawn fruit from olive groves anchored by the region's distinctive dry-stone walls, these ancient barriers shaping the landscape across the 39-municipality DOP zone. The resulting extra virgin oils carry the signature of elevation and geology: medium-to-intense profiles with green tomato notes characteristic of the Monti Iblei terroir.
