The producer crafts this protected cheese from raw whole milk sourced from Valdostana cattle—a dairy breed adapted to Alpine terrain. Each wheel develops the signature springy paste and delicate sweet taste that define Fontina, holes forming naturally through fermentation. Operating within a production area spanning 74 municipalities, the maker participates in one of Italy's most geographically defined cheese traditions, where terroir and livestock genetics converge.
