L'Aurore operates in Pollein, at the heart of the Aosta Valley's Fontina DOP territory spanning 74 municipalities. The cooperative specializes in cheese produced from the raw whole milk of Valdostana cows, the indigenous breed adapted to alpine pastures. Each wheel develops the pale yellow paste and delicate characteristic holes that mark authentic Fontina—a result of careful fermentation and the milk's seasonal variation. The springy texture and subtle sweetness reflect both cow genetics and terroir, setting the standard for this protected origin.
