La Bresaola de Baita

Since 1950, La Bresaola de Baita has produced bresaola in Valtellina from beef sourced across 77 municipalities, applying time-honoured salting and natural aging techniques. The producer returns to artisanal butchery methods learned in family practice, hand-crafting each cut to achieve the Protected Geographical Indication's strict standards: a firm, elastically-textured product with uniform red colour and delicate aroma.
