Founded in 1980, Latteria Roverbasso transformed Dino Modolo's cheesemaking vision into a steadily expanding operation across Codognè. The modern facility now produces both fresh and aged cheeses under the guidance of the founder's sons and a skilled production team. Their Montasio DOP—a cylindrical cow's-milk cheese matured at least 60 days with a characteristically compact paste and slight piquancy—stands as a signature expression of Veneto's dairy heritage. Visitors can tour the dairy and taste cheeses directly from the company shop, experiencing how alpine milk becomes protected denomination cheese.
