Latteria Sociale di Branzi produces Formai de Mut dell'Alta Valle Brembana DOP, a semi-cooked raw cow's-milk cheese crafted across 21 municipalities in the Brembana valley. The cooperative's wheels—each 8–12 kg—develop straw-yellow rinds during minimum 45-day maturation, yielding delicate flavors that express the alpine pastures of their production zone.
