Latteria Sociale di Branzi stands at the heart of Taleggio DOP production, a co-operative rooted in Bergamo's Lombardy valleys. This casearia crafts the denomination's signature washed-rind cheese—soft, pale blocks of 1.5–2.5 kg with a yielding paste and vegetal complexity. Each wheel spends minimum 35 days on wooden boards, developing the amber crust and supple interior that define the protected origin across its sprawling 1,480-municipality zone.
