Amedeo Marangolo works with Ogliarola olives in Salento, producing Terra d'Otranto DOP extra virgin olive oil within the sprawling 96-municipality zone of southern Puglia. His oils carry the herbaceous signature of the Salento terroir: notes of cardoon and artichoke that define the region's character, layered with hints of chicory.
