Merano Speck S.r.l. produces Original Südtiroler Merano Speck g.g.A., a boned and cold-smoked ham from South Tyrol's 116 municipalities, cured to exacting standards. At their Naturns facility, the family-run producer has perfected this craft for over three decades, applying traditional recipes and alpine seasonality to achieve the ham's signature brown exterior and ruby-red interior. The gradual temperature and humidity shifts across all four seasons impart the distinctive flavor profile that defines this IGP denomination.
