Based in Bologna, this producer crafts the IGP-protected Piadina Romagnola using the region's wheat flour as its foundation. Each round is cooked on a traditional flat pan until its surface blisters and deepens from ivory to amber—a signature that distinguishes authentic Romagnola from ordinary flatbread.
