Podere Bignolino di Contardi Cirillo produces Oltrepò Pavese metodo classico DOCG, a méthode champenoise sparkling wine rooted in Lombardy's premier appellation. The winery crafts both classic and rosé expressions from Pinot nero, Chardonnay, and white Pinot varieties, each aged a minimum of 15 months on the lees. This extended maturation develops complex aromatics and fine mousse, hallmarks of traditional bottle-fermented production in a zone spanning 41 municipalities across the rolling hills south of Pavia.
