Redenti Giuseppe operates in Piazza al Serchio, at the heart of Lucca's Garfagnana zone, where farro cultivation spans fifteen municipalities across Tuscany's northern valleys. His Farro della Garfagnana IGP upholds the region's ancient grain tradition—each kernel bearing the characteristic whitish streaks that distinguish this polished emmer wheat. Working within the protected denomination's strict parameters, Redenti preserves a crop that shaped Etruscan and medieval diets, now revived as a cornerstone of sustainable, slow-food practice.
