Sisters Angiola and Paola Morini harvest this semi-milled IGP variety from April plantings through October, adhering to crop rotation and spring water irrigation on family land. Their mechanical processing—stripping husks and whitening rice without chemicals—preserves the grain's integrity. Beyond signature risotto rice, Corte Schioppo produces rice flour, pasta, and a wellness line, all gluten-free, all locally grown.
