Riso Riccò cultivates Vialone Nano Veronese IGP in the springwater-fed plains south of Verona, where the variety thrives in naturally mineral-rich irrigation. This semi-milled rice, bred from a 1937 cross, commands respect among international chefs for its stubby grains and ability to hold firmness through risotto's stirring. Operating from the historic Corte Sacco, the producer harnesses the territory's transparent groundwaters to protect seedlings from sowing through harvest, sustaining one of Italy's most prized rice denominations.
