San Silvestro works within the Alta Langa DOCG, a Piedmont region spanning 148 municipalities where elevation and cool winds define sparkling wine-making. The producer crafts both spumante and spumante rosato from Pinot Noir, Chardonnay, and complementary still grapes, each bottle spending a minimum of 30 months ageing to develop complexity. At 11.5% alcohol and above, these are wines of precision rather than power—expressions of how time in bottle transforms fruit into minerality.
