For nearly a century, Sergio Falaschi Carni e Salumi has upheld its San Miniato craft, working directly with local livestock farmers to source animals for its handmade salumi. The macelleria, established in 1925 in the town's historic centre between Pisa and Florence, remains a living archive of Tuscan butchery traditions. Today, Sergio, his children Andrea and Anna—the third and fourth generations of master butchers—continue this lineage with meticulous attention to each preparation, translating generations of knowledge into every slice of Finocchiona IGP.
