The cooperative specializes in Fontina DOP, the region's signature cheese, crafted from raw whole milk of Valdostana cattle—a breed shaped by alpine terrain. Each wheel develops the characteristic springy paste and delicate holes that mark authentic Fontina, its sweet flavor emerging from the milk's terroir. The cooperative draws from a production zone spanning 74 municipalities, anchoring its work in the protected standards that define the denomination.
