Società Agricola Baronchelli Mario operates across Lombardy's Taleggio zone, transforming milk from its 3,000-head Italian Friesian herd into the region's signature washed-rind cheese. Founded by Mario Baronchelli six decades ago, the firm evolved from a modest 20-cow dairy into a modern caseificio. Since 2000, the three siblings Daniela, Oscar, and Alberto have refined production techniques while maintaining the foundation Mario established, creating Taleggio's distinctive rectangular blocks matured minimum 35 days on wood.
