Based in Ollolai, deep in Nuoro's pastoral heartland, the estate draws from a production zone spanning 377 municipalities across Sardinia. Each wheel emerges from traditional techniques applied to whole milk, yielding a dense paste that develops complexity over time, capturing the island's limestone terrain and endemic grazing lands in a single cheese.
