Francesco Sorace grows Cipolla Rossa di Tropea Calabria IGP across the Tyrrhenian slopes of southern Italy, where volcanic soil and Mediterranean climate create the region's signature sweetness. His cipollotto and storage onions reach markets fresh and preserved, carrying the Protected Geographical Indication across the 23-municipality zone. Each harvest reflects terroir: the onion's natural sugars intensify under coastal sun, making Sorace's crop distinctly less pungent than common varieties.
