Tabacco Ivan operates in Avezzano, at the heart of the Fucino plateau in Abruzzo, where volcanic soils and high-altitude cultivation shape the region's signature potato. The producer works with Patata del Fucino IGP, a protected variety distinguished by firm flesh, regular tuber geometry, and skin that holds through harvest and storage. This cultivation heritage emerged from the 19th-century reclamation of Europe's largest glacial lake, transforming a drained lakebed into fertile agricultural terrain. Each harvest reflects the precision demanded by the denomination's strict standards.
