Tassoni's lambs follow a defined trajectory—milk-fed from birth, then transitioned to grazing—producing meat classified by carcass type and weight. This methodical approach yields the light, heavy, and castrated varieties that define the denomination, each reflecting the precise conditions of central Italy's upland terrain.
