Terre d'Oltrepo' operates as an agricultural cooperative across the 41 municipalities of Oltrepò Pavese, a region defined by its metodo classico sparkling wines. The collective transforms Pinot nero, Chardonnay, and Pinot grigio into bottle-fermented spumante and rosé, each aged a minimum of 15 months to develop complexity and structure. By pooling resources across dispersed vineyards, the cooperative achieves the consistency demanded by DOCG specifications while maintaining the terroir variations that distinguish individual cuvées within the denomination.
