Uccellatori sources Japonica Superfino rice from the Po Delta's 17-municipality zone, where alluvial soils and cool water systems shape grain development. Each lot meets the IGP minimum: 6.60% protein and pearly grains of large calibre that absorb cooking liquid without losing structure. The variety's high absorption capacity makes it ideal for risotto, where starch release and grain integrity determine success. Uccellatori selects within this protected designation to ensure consistency in what the Delta's climate and hydrology naturally deliver.
