Paolo Verdi operates an agricultural enterprise dedicated to Oltrepò Pavese metodo classico DOCG, the region's flagship sparkling wine from a 41-municipality zone. His cellar works with the classic Pinot nero, Chardonnay, Pinot grigio, and Pinot bianco—grapes suited to the cool continental climate. Each vintage spends a mandatory 15 months on its lees, developing the structure and complexity that define traditional method sparkling wines. With minimum 11.5% alcohol, Verdi's spumante and spumante rosé exemplify the calibrated precision required by DOCG standards in northern Lombardy.
