Le Bertarole produces Amarone and Recioto della Valpolicella DOCG from Fumane's steep-sided vineyard slopes. Corvina Veronese and Rondinella are dried on racks in the cellar, concentrating sugars through winter months until spring fermentation. The resulting Amarone reaches minimum 14% alcohol after 24 months in wood, while Recioto, vinified as both still and sparkling passito, captures the intensity of withered grapes at lower alcohol levels. Each bottling reflects the appassimento tradition of Veneto's most renowned zone.
