The regulations mandate at least twelve months of aging and a minimum alcohol content of twelve percent, thresholds that the company achieves through meticulous vineyard care rather than cellar manipulations. It is a family farm, now in its third generation—Aldo with his children Deborah and Mirco—that has worked exclusively with local varieties for over thirty years, without succumbing to the temptation to expand its repertoire. The resulting Bardolino Superiore focuses on finesse and thoughtful drinkability, far from reds of mere power.
