Antiche Tradizioni di Gragnano preserves five centuries of pasta-making wisdom within the denomination zone that gives its name to the Campanian city. The raw material is durum wheat, bronze-drawn to achieve that rough, opaque surface that holds sauces, and a straw-yellow color indicating the absence of artificial processes. The IGP standard sets a minimum of thirteen percent protein, a threshold that here is a starting point rather than a goal. Every stage of processing is calibrated according to techniques codified during the Bourbon kingdom, when Gragnano became the recognized capital of dried pasta. This continuity is not nostalgia but method: the dough, extrusion, and slow drying work together to give the pasta the structural integrity that withstands cooking and the expected depth of flavor. From this work emerges a product that carries the name of Gragnano far beyond Campania, recognizable on tables for a resilience and texture that bronze drawing alone can guarantee.
