From Sostegno, on the edge of the Biellese wine region, Antoniotti Odilio entrusts every bottle to Nebbiolo, which here goes by the name of Spanna. This grape variety is called upon to uphold two of northern Piemonte's most demanding denominations, Gattinara and Ghemme, both DOCG: alpine-rooted reds, with a taut structure and an acidity that promises long life in the bottle, far from the softness of Langa's Nebbiolo. In Gattinara, the grape finds companions in Vespolina and Uva Rara and rests for at least thirty-five months before release, the time that the complexity of these northern wines demands. Here, rigor matters more than gesture: the mountain terroir and the long cellar aging shape reds that demand patience from those who drink them. The doors are always open for tastings, a tangible opportunity to gauge, glass in hand, how altitude and cold climate impact wines that are still too little known.
